Vegetable Quinoa Soup

This soup is packed with healthy food - quinoa, sweet potatoes, kale. And it was really quick to prepare and tasty to boot. Next time I might use yams, just to add a pop of colour.


Vegetable Quinoa Soup
- 2 tsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup thinly sliced mushrooms
- 1 sweet potato, peeled and diced
- 2 cups vegetable broth
- 1/2 cup quinoa
- 2 cups stemmed kale, thinly sliced
- 1 tbsp red wine vinegar
- salt and pepper to taste

In Dutch oven or large saucepan, heat oil over medium heat and cook onion and garlic, stirring often, until softened, 5 minutes. Add mushrooms, cook stirring occasionally, until beginning to soften, 4 minutes. Stir in sweet potato, 3 cups water, broth, quinoa and salt and pepper. Bring to a boil, reduce heat to medium and cook until quinoa is tender - 10 - 12 minutes.

Stir in kale, cooking until tender, about 2 minutes. Stir in vinegar.
