For dinner tonight I decided to go old school and make meatloaf. We didn't have meatloaf a lot growing up, to be honest I can't remember having it at home ever. This recipe is nice because it makes about 4 servings, which is perfect because meatloaf isn't something I could eat every day, although I'm sure Brent would be happy with more leftovers!
Classic Beef Meatloaf
- 1 onion, diced
- 1 stalk celery, finely diced
- 1 clove garlic, minced
- 2/3 cup bread crumbs
- 1 egg, beaten
- 1 tbsp horseradish
- 1 tsp worcestershire sauce
- salt and pepper
- 1/2 lb (500g) lean ground beef
- 2 tbsp ketchup
Heat 1 tbsp vegetable oil in skillet over medium heat. Saute onion, celery and garlic, stirring occasionally, until softened, 5-8 minutes. Transfer to large bowl; let stand for 10 minutes.
Stir in bread crumbs, egg, horseradish, worcestershire, and salt and pepper. Add beef and mix to combine. At this point I take off jewellery and use my hands. Form meat into a 7x4 inch log and place on a foil-lined rimmed baking sheet. Brush all over with ketchup.
Bake in 375 F oven until instant-read thermometer inserted into centre reads 160F, 45 - 50 minutes. Let stand 10 minutes before slicing.
