Now that our 30 Day Dinner Challenge is over, I've been really enjoying coming up with recipes based on some of the leftover ingredients we have in the freezer and cupboard. It's difficult at times for me to blog these recipes because I am notorious for not measuring or timing anything. So with a warning that all measurements and times are approximate, here is our Sunday night dinner from this week.
Spicy Sausage and Rice
- 1 1/2 cups rice
- 2 sausages (I used spicy Italian)
- 1 cup each red pepper, celery, carrot and onion, chopped
- 1 cup sugar snap peas
- 1/2 cup feta cheese
Prepare rice according to your preferred method (mine is a rice cooker). Set aside.
Heat 1-2 tbsp oil in a large skillet. Brown sausages (about 5 minutes), remove from pan, slice, and return to pan to continue cooking through if needed. Place on plate with paper towels and set aside.
In same skillet add pepper, celery, carrot and onion, sauteeing until softened, about 5 minutes. Add sausage back and sugar snap peas. Saute until sausage is warmed through and peas are bright and still crispy. Add rice, stirring to mix everything together. Crumble feta cheese and mix through.
Makes about 4 servings, and reheats great for lunch the next day.
