Fresh Apple Cookies

This is another great recipe with apples, and what better time of year than the fall to bake some apple cookies? I would recommend laying some wax paper down before glazing the cookies.

I'll be bringing these ones to my economics study group tomorrow, and can only hope my group will forgive me for not understanding the material!



Fresh Apple Cookies (from Best of Bridge)
- 2 cups flour
- 1 tsp baking soda
- 1/2 cup butter, softened
- 1 1/3 cups packed brown sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1/2 tsp nutmeg
- 1 egg, beaten
- 1/4 cup apple juice or milk (I used almond milk)
- 1 cup chopped peeled apples
- 1/2 cup chopped nuts (I used almonds)
- 1 cup raisins

Preheat oven to 375 F. In medium bowl combine flour and baking soda. In large bowl or stand mixer, cream together butter, brown sugar, salt, cinnamon, cloves, nutmeg and egg. Add half the flour to the butter mixture and blend well. Mix in juice or milk. Add apples, nuts and raisins to the remaining flour. Add this mixture to the butter mixture. Drop by spoonfuls on greased cookie sheets and bake for 10 minutes or until cookies are firm.


Vanilla Glaze
- 1 cup icing sugar
- 1 tbsp butter, softened
- 1/4 tsp vanilla
- 1/4 tsp salt
- 1 1/2 tbsp milk

Blend all ingredients together until smooth. While cookies are hot, spread with vanilla glaze.

Makes 2 dozen cookies.
